Apricots Dried in the Sun
Sun-dried apricots take their name from the drying method: the fruit is left directly in the sun rather than treated with sulphur. That is why the colour is closer to deep brown than bright orange, and the taste is more concentrated, with a caramel note. The colour difference is not a fault but the natural result of the method.
Sun-Dried Apricots at the Table
They are served as they are in bowls, and also used in compotes, dessert fillings, cake and biscuit doughs. If they feel firm, a few minutes in warm water softens them. Because the drying is natural, pieces may differ in size and shade, which is entirely normal.
