Almonds in Their Natural State, Unroasted
Raw almond kernels are shelled but not roasted. Their taste is plainer and their texture firmer than roasted almonds, which is why they are preferred whenever you do not want the aroma to dominate. The kernels are size-graded and packed without damage to the outer surface.
Raw Almonds in the Kitchen
They are used for almond milk and homemade almond butter, in dessert decoration, granola blends and salads. To remove the skins, hold the kernels in boiling water for a few minutes and the thin skin slips off easily. A short spell in a low oven lets you set the roasted note to your own taste.
