Freshness Straight From the Shell
Walnut kernels are hand-sorted after cracking and packed with the halves kept intact. Light colour and a bright break surface point to freshness, while darkened, shrivelled pieces may have been stored too long. At Özbeyoğlu the kernels are size-graded after sorting and taken straight to the packing line so the halves do not break.
How to Store Walnut Kernels
Walnuts are high in oil, so their taste changes quickly on contact with light, heat and air. After opening, keep them in a sealed container in a cool, dark place; if you will not use them for a while, the refrigerator or freezer works well. Stored this way, the kernel keeps its own distinct taste.
